One of the singular most impressive things the NB can do for her date is make a fantastic meal.  And while everyone loves English Muffin Pizzas, taking your lady on a journey through course after course of culinary delights is far more exotic and far more erotic.  Here’s a sample menu for a killer meal–After making this meal for my girlfriend, I sealed my place in the NB hall of fame.  **Don’t be intimidated, it only took me about an hour to assemble.

1st Course:

Wild Mushroom Soup in a Ginger/Onion broth

 

2 bowls of boxed Onion Stock

2 cups of fresh crimini, beach, and oyster mushrooms

1 dash of ginger

1 tsp of chopped garlic (preferably from a jar, packed in oil)

 

**Heat all ingredients together on stove-top in soup pot, bring to a boil.  Simmer until all mushrooms are cooked.

 

2nd Course

Island Salad With Mixed Fruits

 

2 bowls of mixed greens

2 tbsp of Guacamole

½ Champagne Mango

2oz Chopped Fresh Coconut

10 baby heirloom tomatoes

1 baby banana

 

Toss the mixed greens & the guacamole, then separate into 2 servings, top with chopped mango, coconut, & tomatoes.  Finish with Baby Banana garnish.

 

3rd Course

Sesame Encrusted Seared Tuna drizzled with a ginger-soy reduction and finished with a wasabi-cream sauce. Served on a bed of shredded squash & endive

 

Squash & Endive Slaw:  Combine grated fresh butternut squash & finely sliced endive (4 parts to 1) and add salt, pepper, powdered ginger, a tiny bit of maple syrup & a tiny bit of soy sauce.  Toss and chill.

 

Tuna: wash tuna steaks and sprinkle with sea-salt & white pepper.  Then press into a dish of sesame seeds until both sides are completely coated.  Heat a frying pan with ¼ inch of peanut oil—when oil starts to smoke, drop the steaks in, maybe one minute on each side or cook to desired color/temp.  Slice in thin strips.

 

Ginger-Soy Reduction: add ¼ cup of soy sauce and ¼ cup of teriyaki to a sauce pan.  Shave fresh ginger into the mix and heat until combination has a thick, syrupy consistency.

 

Wasabi Cream Sauce: (pre-made)—Stonewall Kitchen makes a really good one.

 

Use ramekins to create perfect cylindrical shapes of the squash slaw, place in one corner of the plate.  Drizzle mixture and base of plate with the ginger-soy reduction.  Place the sliced tuna steaks on a cascading angle atop the squash cylinder and then drizzle the entire plate with the wasabi cream.

 

 

4th Course

 Vanilla Bean Ice Cream and Mixed Berry Compote

 

Buy frozen, mixed berries & warm in a sauce pan on low-heat.  Place in the bottom of a rocks glass with two large scoops of vanilla ice cream on top.  Enjoy!
